Za dve osobe:
- špagete sa sipinim uljem, polovina pakovanja, oko 250 grama
- neko dimljeno meso (Ovde je sezona domaćeg dimljenog mesa, može pančeta, ili neka druga mesnata slanina, ili pršuta - ali nju ne bih pržio...)
- 5-6 kašika maslinovog ulja
- dva čena belog luka, seckan na listiće
- malo ruzmarina (6-7 "iglica"), i još malo za dekoraciju
- so i biber po ukusu
- malo tvrdog sira za rendanje (Ja sam koristio neki ovčiji sa Vlasine, može Parmezan ili Pekorino ili šta ja znam...)
- dva jaja
Vreme pripreme: oko 30 minuta.
Težina: srednje-teško.
Špagete sam kuvao 8 minuta. Prethodno sam u vodu dodao prstohvat soli i 3 kašike maslinovog ulja. Osam minuta je taman dovoljno da na maslinovom ulju kratko propržim na kockice seckano suvo meso, ruzmarin i beli luk. Sada procedim špagete, ali sačuvam vrelu vodu. Špagete prebacim u tiganj sa slaninom i izmešam. Vodu vratim u šerpu u kojoj sam kuvao špagete, pustim da provri, zavrtim je u krug i na sredinu slomim jedno jaje. Kratko kuvam, pa pažljivo izvadim. Isto ponovim sa drugim jajetom. Serviram preko špageta, dodam sir, još koju kap maslinovog ulja i ruzmarin za dekoraciju.
Naravno ima mnogo recepata za karbonare. Evo jednog sličnog za one koji ne vole poširana jaja. Sve isto do dela gde špagete izmešate sa suvim mesom. Sada izmutite dva jaja sa 4 kašike maslinovog ulja, malo soli i bibera. Prelijete preko vrelih špageta i promešate. Jaja će se samo delimično termički obraditi. Možda deluje malo neuredno ali je prokleto ukusno. Odozgo opet malo sira i ruzmarin.
Black Carbonara
Serves for two:
Preparation time: 30 minutes.
Weight: medium-hard.
I cooked spaghetti for 8 minutes. I have previously added to the water a pinch of salt and 3 tablespoons olive oil. Eight minutes is just enough to fry diced smoked meat, rosemary and garlic in a little bit olive oil. Drain the spaghetti and put them into the pan with bacon and mix well. Save hot wather in which you cook spaghetti, let it boil, spin it around and break an egg in the middle of it. Cook briefly (few minutes), then carefully remove. Repeat with the other egg. Served over spaghetti, add cheese, a few drops of olive oil and rosemary for decoration.
Of course there are many recipes for Carbonara. Here's one for those that do not like poached eggs. All the same to the part where spaghetti mixed with meat. Now beat two eggs with 4 tablespoons of olive oil, a little salt and pepper. Pour over hot spaghetti and stir. It may seem a bit messy but it's damn tasty. Again, a little cheese and rosemary.

- spaghetti with cuttlefish oil, half of the package, about 250 grams
- some smoked meat (This is a homemade smoked meat. You can use pancetta, or some other bacon or ham.)

- two cloves of garlic, chopped into slices (You can make without garlic.)
- little bit of rosemary
- salt and pepper to taste
- some hard cheese for grating (I used a sheep cheese. You can use Parmesan or Pekorino or what do I know ...)
