Oktopod





















Octopus. Greek recipe, with english translation at the bottom of this page. Potrebno, za dve osobe:


  • 6 pipaka od hobotnice kao što je ona na slici dole (nekad su dovoljna 4)
  • 4 kašike maslinovog ulja
  • 2x50 mililitara belog vina
  • dva čena belog luka, seckana na tanke listiće
  • so i biber po ukusu
  • malo sveže samlevenog belog bibera
  • sok od pola limuna


Za prilog: 


  • jedan veći paradajz
  • jedna tikvica
  • dosta svežeg peršuna
  • 3-4 čena belog luka, krupnije seckanog
  • 3-4 kašike maslinovog ulja
  • so i biber po ukusu
  • bosiljak za dekoraciju


Vreme pripreme: oko 45 minuta.
Težina: srednje-teško.



Uloviti i očistiti hobotnicu. Trebalo bi da ima 8 pipaka, ako ne lovite pored nuklearne elektrane. Šest za ovo jelo, dva i glava za predjelo (salatu) sa prethodnog posta.


Zagrejemo teflonski tiganj. Pipke posolimo, pobiberimo i prelijemo maslinovim uljem. Bacimo na vreo tiganj. Skaču kao živi. Kad jedna strana porumeni okrenemo drugu. Kad i druga strana porumeni sipamo 50 ml belog vina, smanjimo "na jedinicu", poklopimo i ostavimo 10 minuta. Zatim okrenemo, dodamo još 50 ml vina i ostavimo da se, hajde da kažemo dinsta, još 15-ak minuta. Pred kraj dodamo beli luk, beli biber i limunov sok. P.p. još malo soli.

Za prilog u pogodnoj šerpi, na maslinovom ulju, kratko propržiti paradajz, tikvicu i beli luk. Paradajz će da pusti malo vode, pa nek se to lepo ukrčka. Dodati peršun, so i biber. Ukrasiti svežim bosiljkom.

Za lov na hobotnice sam se naravno šalio. Kupio sam je od ribara na doku.


Octopus
For two servings:
  • 6 octopus tentacles
  • 4 tablespoons of olive oil
  • 2x50 ml white wine
  • 2 cloves of garlic cut into thin slices
  • salt and pepper to taste
  • little bit of freshly ground white pepper
  • 2 tablespoons of lemon juice

Side dish:
  • one larger tomato
  • one zucchini
  • fresh parsley
  • 3-4 cloves garlic, coarsely chopped
  • 3-4 tablespoons of olive oil
  • salt and pepper to taste
  • fresh basil for decoration

Preparation time: about 45 minutes.
Weight: moderate.



Catch and clean the octopus. I’m joking. I bought it at the market. Take 6 tentacles. Season with salt and pepper, and then add a little bit of olive oil. Put them into the hot pan. When one side is golden brown (say 10 minutes), turn them over. When the other side is done (another 10 minutes), pour 50 ml of white wine, reduce the heat, cover and leave for 10 more minutes. Turn them again, add another 50 ml of wine, and cook for another 15 minutes. At the end add garlic, white pepper and lemon juice.

For a side dish: Heat olive oil. Add tomatoes, zucchini and garlic. Sauté for 15 minutes. Add parsley, salt and pepper. Garnish with fresh basil.
